Lately, I have been desperately searching for new pasta recipes. We’ve been eating one pasta dish a week and I was getting a little sick of the old classics, and looking for something new and fresh. When I stumbled across a recipe for Pasta al Limone, my little ears instantly pricked up. This low FODMAP Pasta al Limone is fresh, zesty and light – perfect for those nights you don’t feel like putting in the hard yards, but want something that’s going to make you feel like you’re on a vacation somewhere in the sun.

I personally think making your own pasta elevates this dish even further – though it does require a little more work on your part. This delicious, zingy sauce requires just four key ingredients and comes together ridiculously quickly. I would recommend a few things to make sure your lemon juice doesn’t curdle your cream when you combine them. Firstly, give the lemon juice a little time in the pan with your butter, salt and pepper to cook. Then, turn the heat down and allow the mixture to cool slightly before you add in the cream. Secondly, make sure that cream is as full fat as you can get – this helps it not curdle when you combine it with the acidity of the lemon juice.

If you do want to thicken your sauce slightly, an easy way of doing it is to add in a few spoonfuls of your pasta water while it’s simmering.

It’s such a great feeling when you can take a simple dish, and only need to tweak a few things to make it FODMAP friendly. And these days, who can really tell the difference between regular and low FODMAP pastas, and normal cream and lactose free? Not my friends and family, that’s for sure.

I have found that this pasta stores quite well in an airtight container for around two days. My recommendation would be to add it back into a pan on low to medium heat to bring to temperature, so you can make sure the heating is even. I think this dish pairs perfectly with a glass of wine!

Ingredients

  • 2 cups low FODMAP pasta of choice
  • 1 tbsp butter
  • Juice and zest of 1/2-1 lemon
  • 1/4 parmesan
  • 1/2 cup lactose free cream
  • Salt and pepper, to taste

Instructions

Makes 2 serves

  1. Cook the pasta according to the packet instructions.
  2. In a large frying pan, melt the butter and add the salt, pepper, and zest and juice of the lemon (start with 1/2 a lemon and then you can add more to taste later).
  3. Once it has cooked away for about a minute, turn the heat to low and allow to cool slightly.
  4. Pour in the cream and add the parmesan, stirring to incorporate everything evenly.
  5. Add a few spoonfuls of the pasta water to thicken the sauce if desired.
  6. Once the pasta is cooked, drain it thoroughly and add it to the sauce, tossing to coat.
