Triple Chocolate Cookies

These low FODMAP Triple Chocolate cookies are not to be taken lightly! Bursting with white, milk AND dark chocolate chips, they will satisfy even the most holic of chocaholics.

Ingredients

  • 114g butter, softened
  • 1/4 cup caster sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1.5 cups low FODMAP flour
  • 1/4 cup cacao
  • 1 tsp baking powder
  • Pinch salt
  • 1 tsp cornflour
  • 50g white chocolate chips
  • 40g milk chocolate chips
  • 50g dark chocolate chips

Instructions

Makes: 12 cookies (Low FODMAP serve - 1 cookie)

  1. Line a large baking sheet and set aside.
  2. In a large mixing bowl, cream together the softened butter and sugars with an electric whisk.
  3. Add the egg and vanilla and whisk until light and fluffy.
  4. Sift in the flour, cornflour, cacao, baking powder and salt, and mix until a smooth dough forms.
  5. Fold in the chocolate chips until evenly incorporated.
  6. Scoop out 12 balls of dough (around 1.5-2 tbsp per ball) and place them on a plate and refrigerate for an hour.
  7. Once chilled, preheat the oven to 180C and place the cookies on the lined tray.
  8. Bake for 10-12 minutes and allow to cool on the tray before transferring them to a rack to finish cooling.
