Christmas Shortbread

Christmas just isn't Christmas without shortbread! This recipe is so simple and easy and you won't be able to resist these buttery bites of delight.

Ingredients

  • 80 grams salted butter, cold
  • ¼ cup caster sugar
  • 1/3 cup rice flour
  • 1 cup plain flour
  • 1 tsp vanilla essence
  • Pinch salt
  • 2-3 tbsp iced water

Instructions

Makes: approximately 20-25 large cookies (number depends on cookie cutters used)

  1. Preheat the oven to 160C and line a large baking tray.
  2. Take the butter out of the fridge and cut it into small cubes. Set aside.
  3. In a large mixing bowl, add the caster sugar, flour, vanilla and salt and stir until everything is evenly incorporated.
  4. Add in the cold butter and using a rubbing motion, “rub” the butter into the flour mixture until it resembles wet sand.
  5. Add in the ice cold water gradually. Between each addition, collect the dough together and knead it until a smooth dough forms that no longer falls apart.
  6. Roll the dough out, either onto your lined baking tray or on a lightly floured surface until 1cm thick.
  7. Using cookie cutters, cut out as many cookies as the dough will allow, and distribute them across the tray.
  8. Bake for approximately 8 minutes or until golden brown.
