Christmas Iced Brownies

What better way to get into the Christmas spirit than with a delicious gooey pan of chocolate brownies, topped with a decadent icing and decorated in only the most festive of ways?!

Ingredients

For the brownies:

  • 150g butter
  • 200g chocolate
  • 1/2 cup caster sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 tbsp cacao
  • 1/2 cup plain flour
  • 1 tsp vanilla
  • pinch salt

For the icing:

  • 40g softened butter
  • 200g icing sugar
  • 2 tbsp cacao
  • splash low FODMAP milk

Decorations:

  • Low FODMAP pretzels
  • Candy eyes
  • Red and green M&Ms
  • Christmas sprinkles
  • Candy canes

Instructions

Serves: 16

  1. Preheat the oven to 180C and line and grease a standard square baking tin.
  2. Melt the butter and chocolate together in a large, microwave safe bowl.
  3. Add the sugars and whisk through.
  4. Add the eggs and stir until well combined.
  5. Sift in the cacao and flour, and add the salt and vanilla. Stir until smooth.
  6. Pour the batter into the tin and bake for approximately 25 minutes or until your desired brownie consistency.
  7. To make the icing, combine the softened butter, icing sugar, cacao and milk using an electric whisk until smooth.
  8. Ice the brownies when they are cool.
  9. Cut into 16 squares and decorate with desired Christmassy toppings!
