Makes: 8 cookies (Low FODMAP serving size = 1 cookie)
- Preheat the oven to 170C and line a baking tray.
- In a large mixing bowl, melt the coconut oil in the microwave.
- Add the brown sugar and honey or golden syrup and stir.
- Add the dry ingredients and mix until well combined.
- Using a cookie scoop, make 8 cookies. The mixture may fall apart a little as you scoop, so use your hands to shape the cookies, and flatten them slightly on the baking tray.
- Bake for 12 minutes or until golden. Allow to cool completely on the tray before serving.
