These low FODMAP Triple Chocolate cookies are not to be taken lightly! Bursting with white, milk AND dark chocolate chips, they will satisfy even the most holic of chocaholics.
Makes: 12 cookies (Low FODMAP serve - 1 cookie)
- Line a large baking sheet and set aside.
- In a large mixing bowl, cream together the softened butter and sugars with an electric whisk.
- Add the egg and vanilla and whisk until light and fluffy.
- Sift in the flour, cornflour, cacao, baking powder and salt, and mix until a smooth dough forms.
- Fold in the chocolate chips until evenly incorporated.
- Scoop out 12 balls of dough (around 1.5-2 tbsp per ball) and place them on a plate and refrigerate for an hour.
- Once chilled, preheat the oven to 180C and place the cookies on the lined tray.
- Bake for 10-12 minutes and allow to cool on the tray before transferring them to a rack to finish cooling.
