Skillet Cookie

For those days when you just can't be bothered to scoop out individual cookies - make one giant one! The low FODMAP skillet cookie of your dreams.

Ingredients

  • 300g salted butter
  • 1 cup brown sugar
  • 1/2 cup caster sugar
  • 2 eggs
  • dash vanilla
  • 3.5 cups low FODMAP plain flour
  • 1 tsp baking powder
  • pinch salt
  • 2-2.5 cups chocolate chips

Instructions

Makes: 12 servings (low FODMAP serving size: 1 slice)

  1. Preheat the oven to 180C and grease a 20cm (diameter) pie dish or skillet.
  2. In a large, microwave safe bowl, melt the butter.
  3. Add the sugars, egg and vanilla and whisk vigorously until smooth and combined.
  4. Sift in the flour and add the baking powder and salt. Stir until a batter forms.
  5. Add the chocolate chips and fold through the batter until evenly distributed.
  6. Transfer the dough into the greased skillet or dish and spread it out evenly using a spatula or your hands.
  7. Bake for approximately 25 minutes or until crispy at the edges and still gooey in the middle.
