Funfetti Cookies

These low FODMAP Funfetti Cookies are the pinnacle of simple, delicious baking - no chilling required, just prep, bake and enjoy!


  • 114g salted butter, softened
  • 3/4 cup caster sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1.5 cups low FODMAP plain flour
  • pinch salt
  • 1/4-1/3 cup baking sprinkles


Makes: 12 cookies

  1. Preheat the oven to 180C and line a large baking sheet.
  2. In a large mixing bowl, cream together the softened butter and caster sugar with an electric whisk.
  3. Add the egg and whisk until light and fluffy.
  4. Sift in the flour, and add the vanilla and salt, and mix until a smooth dough forms.
  5. Fold in the sprinkles until evenly incorporated.
  6. Scoop out 12 balls of dough (around 1.5-2 tbsp per ball) and place them on the lined tray (you may need to cook in 2 batches as the cookies spread).
  7. Bake for 10 minutes and allow to cool on the tray before transferring them to a rack to finish cooling.
