Crash Hot Potatoes

Ingredients
- 5 small washed potatoes
- 6 tbsp olive oil
- salt and pepper, to taste
- handful sage (optional)
- 2 tbsp butter (optional)
Instructions
- Preheat the oven to 200C, and wash your potatoes under running water and dry thoroughly.
- Pierce the surface of each potato a few times with a fork or a skewer (this stops them exploding in the microwave).
- Place the potatoes on a microwave safe platter and cook them in the microwave on high for 15 minutes. If they are not fork tender, continue cooking at 5 minute intervals until they are.
- Put half the olive oil in a roasting pan and place it in the oven for 5 minutes to allow it to heat up.
- When the oil is hot, remove the potatoes from the microwave and squash them with a potato masher or the bottom of a mug. Add them to the roasting pan and top with the remaining oil. Season with salt and pepper.
- Bake the potatoes in the oven for around 45 minutes or until golden and crispy.
- Optional: just before serving, gently fry off the sage in the butter in a frying pan until slightly browned, and pour over the top.
